Walnut has quite a lot of nutrition and serve as a source of healthy fats, protein, fibre, vitamins, and minerals. The same applies to Berries, especially cranberries. They have potential health benefits, the most common is its use in preventing urinary tract infections and reducing the risk of certain types of cancer. Honey has antimicrobial properties and is one of the most versatile ingredients ever.
To make blue cheese walnut spread, the following ingredients are required:
one 8-ounce brick of Real California cream cheese that has been melted, six ounces of blue cheese that have been crumbled, milk, and half a cup to three-quarters of a cup of chopped walnuts
STEP 1: Mix the blue cheese and the cream cheese. Continue to add milk until the mixture is of a consistency that can be spread.
STEP 2: Mix in the walnuts that have been chopped. Crackers or pretzels would go well with this dip.
NOTE: Alternately, you might reduce the amount of milk that you add, roll the mixture into a ball or log, and then include entire walnuts into the cheese. Cheese should be formed into a ball or log and served with crackers or pretzels.
To make brown butter pumpkin bread pudding with dried cranberries that will make approximately six servings, the following ingredients are needed;
1/2 cup of Unsalted Butter, 8 ounces of stale crusty bread, cubed and measured at 1 inch each, 2 teaspoons of pumpkin pie spice combination, 2 tablespoons of turbinado sugar, or more white sugar, 1/2 cup dried cranberries, 1 cup pumpkin puree from a can (not pumpkin pie filling), 2 teaspoons of vanilla, 1/4 cup white sugar, 1 cup heavy cream, 3 large eggs, 1 cup milk, 1/4 cup packed brown sugar, 1/4 teaspoon of kosher salt,
STEP 1: Put the butter in a skillet of moderate size, preferably one with a silver bottom, and raise the temperature to a medium-high setting. Reduce the heat to low once the butter has entirely melted, at which time you should continue to whisk it often.
STEP 2: Keep cooking the melted butter over low heat until the milk solid particles begin to turn golden brown and the aroma becomes nutty and delicious. After turning off the heat, continue stirring the mixture while allowing the butter to continue to brown from the remaining heat in the pan.
STEP 3: Put the chunks of crusty bread into a big bowl, and then pour the melted butter on top of the bread. After adding the dried cranberries, mix everything thoroughly so that the bread is completely covered. After pouring the mixture into a pan measuring 8 by 8 inches (which may be coated with additional butter if needed), scrape any leftover butter from the bowl onto the bread and sprinkle with the cinnamon. Spread the bread out in an even layer in the pan.
STEP 4: In a bowl that has previously held pumpkin puree, heavy cream, milk, brown sugar, white sugar, eggs, vanilla extract, pumpkin pie spice, and salt, combine all of these ingredients (no need to clean it out). Mix thoroughly by whisking them together.
STEP 5: Pour on top of the custard bread and spread it about so that every piece of bread is coated. To ensure that every piece of bread is covered in custard, use a fork or a spatula to submerge the bread in the liquid.
STEP 6: If you plan on baking the bread the same day, preheat the oven to 350 degrees Fahrenheit and let the custard for 15 minutes soak into the bread. After that, on top of the bread pudding, sprinkle some turbinado sugar (or additional white sugar), and bake it in the oven for around 40 to 45 minutes. If the bread pudding is done correctly, the top should have a golden brown colour, and a butter knife should come out clean when put in the centre of the pudding.
STEP 7: If you plan on baking the bread pudding the following day, cover the pan with plastic wrap and place it in the refrigerator the night before. This will allow the bread to soak up the custard while it sits. The following day, before baking the pudding, preheat the oven to 350 degrees Fahrenheit and sprinkle the top with turbinado sugar (or additional white sugar).
STEP 8: Put the pan straight into the oven and bake it for sixty-five to seventy-five minutes if it is made of metal or if it can go from the refrigerator to the oven. Put the bread pudding in a glass or ceramic pan on the countertop for an hour before placing it in the oven to bake for 55 to 65 minutes. If the pan is not glass or ceramic, bake the bread pudding directly in the oven. Wait 15 minutes for the dish to cool down before serving it.
The ingredients to make 4 serves of burrata with berries and honey are as follows;
1 package of Burrata cheese (eight ounces), one-half cup each of blackberries and raspberries, one tablespoon of honey, one tablespoon of bottled balsamic glaze (any brand), A new sprig of thyme (optional), and Baguette or artisan bread slices that have been toasted.
STEP 1: Lightly mash one-fourth cup of each of the berries in a medium-sized bowl of medium size, reserving the remaining berries for garnishing the dish.
STEP 2: Place the berries in a saucepan, add the sugar, and cook them over low heat so that the juice from the berries can thicken. Mix in one tablespoon of the balsamic glaze using a whisk. Set aside to cool.
STEP 3: Position the Burrata at room temperature in the middle of the plate or bowl. Drizzle 1 tablespoon of the reduced berries and balsamic glaze sauce over the burrata before serving.
STEP 4: To finish, top each serving with a drizzle of honey, the remaining berries, and a sprig of thyme. Baguette or artisan bread that has been toasted should be served alongside.
